Now before I get started on this, I would like to give full credit to Madeleine Shaw as this one is not my recipe but me attempting to make something healthy to feed my parents, based on her recipe.
This was my first bash at this and I have to say, it was dead easy – especially with a Magimix to speed up the veg prep.

As well as feeling smug about how many veggies / how much raw food was in the dinner, I have to say it was just dead easy to create. The BF was worried it would be dry and bland but it was LUSH!
My tips for the recipe are:
- If you buy large, supermarket cucumbers, you don’t need half a cucumber each. I did two for four of us and I’ll be eating cucumber for a week
- Use turkey thigh mince – it has much more flavour and won’t be dry like breast
- Add a sprinkle of coriander on the top. It makes everything better!
